This package includes:

Spare Ribs, one slab cut in half, 5-6lb total
Baby Back Ribs, one 3-3.5lb piece
Pork Riblets, one St. Louis slab cut in half, 2.5-3lb total

Spare Ribs
Cut from the lower portion of a pig behind the shoulder, specifically the belly and breastbone, spare ribs are the meatiest variety and include 11-12 long bones.

Baby Back Ribs
Cut from the upper portion of a pig, or the loin section, baby back ribs are smaller than a full spare rib rack and are known for their tenderness. 

Pork Riblets
We love the mini rib morsels this cutting technique creates! We've taken the St. Louis rib and sliced it down the center through the bones to make them bite-size. The St. Louis rib is the same as a spare rib, but with the deckle bone trimmed off making this cut a little more delicate while still yielding 11-12 meaty ribs per rack.
